THE PROCESS OF CREATING COCOA POWDER

In the early 19th century, Coeraad Johannes Van Houten of the Netherlands invented the process of pressing cocoa to make cocoa butter and cocoa powder, as well as the process of alkalization, that gives to the cocoa powder its unique color, taste, and texture. Since then the process has remained practically the same with little evolution in the applied technology. Through his "Dutch processed" alkalization process, we get our cocoa powder with its intense cocoa taste and color.
