Mirabelle by Orphée: A French Story Rooted in Seattle

During a recent trip to Seattle, our team had the pleasure of visiting several members of our Cercle V community: chefs and artisans who bring passion, craftsmanship, and a distinct point of view to their work.

Our final stop in the city brought us to Mirabelle by Orphée, a Parisian-inspired café, bakery, and pâtisserie nestled in the heart of Pioneer Square, one of Seattle’s most historic neighborhoods.

There, we met Orphée, a French pastry chef whose story is as layered as his creations: shaped by tradition, driven by ambition, and deeply rooted in family.

From Paris to Seattle: A Journey of Craft and Conviction

Born and raised in Paris, Orphée trained at Médéric, one of France’s most prestigious culinary schools, before refining his technique in some of the most iconic kitchens in the world, including Park Hyatt Paris Vendôme and Plaza Athénée, under the guidance of Christophe Michalak, World Pastry Champion, and the vision of Alain Ducasse.

At just 20 years old, he moved to California, where he helped develop several locations of Mademoiselle Colette as Chef-Partner, bringing a modern Parisian café experience to the Bay Area.

Washington came next. As a Corporate Executive Chef, he led multiple openings across the state: building, shaping, and refining his vision with each project.

Mirabelle by Orphée marks a new chapter: his tenth venture in the United States, and the first that is entirely his own.

A Bakery Filled with Memories

Step inside Mirabelle, and you quickly realize this is more than a bakery, it is a deeply personal space. Every detail tells a story.

At the entrance, an antique French mailbox invites customers to leave handwritten notes.

"It’s not just decoration,” Orphée explains. “I receive letters from guests, drawings from kids...”. He has made the deliberate choice not to open it yet. “I’m waiting for the one-year anniversary to open it and discover everything inside.”

Inside the shop, objects from his family are carefully displayed, each carrying emotional weight. A scale from his great-grandmother, gifted by his grandmother, sits at the center of the space.

“If I had to take only one item from Mirabelle, it would be this one.”

Nearby, a collection of books once owned by his grandfather reflects another layer of memory and heritage.

French Craft, Seattle Energy

Mirabelle blends the essence of a Parisian café with the energy of Seattle.

The menu evolves frequently, offering a wide selection of viennoiseries, breads, pastries, and savory items, all made in-house. From breakfast through lunch, everything is prepared fresh, with an emphasis on quality and immediacy.

“We make all our sandwiches to order, nothing is prepared in advance.”

The retail space features over 150 curated products, from chocolate and jams to butter, cheese, and juices, each selected with care to reflect Orphée’s standards and vision.

And then, there is a small detail that says everything about his journey.

On the menu, you won’t just find hot chocolate: you’ll find the “Hot-Cho-Co-Late.”

“When I first came to the U.S., I would ask for a hot chocolate and people didn’t understand my accent,” he explains with a smile. “So I created my own version.”

His version is unmistakably indulgent: a rich blend of Valrhona chocolates and Tahitian vanilla, topped with mascarpone chantilly.

Signature Creations

Among Mirabelle’s standout pastries is the Carré Vendôme, a refined composition showcasing Orphée’s technical precision and French training.

It features a Jivara 40% chocolate mousse, layered with a Tropilia-Manjari feuillantine crunch, a Tanariva milk chocolate whipped ganache, and finished with an indulgent Tropilia glaze.

Elegant, balanced, and deeply chocolate-driven, it reflects both his background and his commitment to excellence.

A Place with History

Location matters. Orphée chose Pioneer Square not by chance, but for its history. Mirabelle is set within one of Seattle’s oldest buildings, near the entrance of the Bill Speidel Underground Tour, where visitors come to explore the city’s past.

Even the original sidewalk lights remain, guiding guests toward the bakery. It’s a place where French heritage meets Seattle history, creating a unique and memorable experience.

A Daily Ritual & A Community Story

Every morning at exactly 7:59 AM, Orphée rings the antique bell at the entrance to open the bakery. A small gesture, but one that reflects discipline, intention, and respect for the craft. A quiet moment before the day begins...

Mirabelle is not just the story of one chef, it is also part of a larger community. From the support of partners to the connection with guests who leave handwritten notes, the project reflects a shared passion for pastry, hospitality, and storytelling.

And, fun fact, even its name carries that spirit: our Valrhona Sales Manager, Shannon, helped Orphée create the bakery name!
