The approach uses gellan gum, a heat-resistant texturizing agent, alongside pH regulation with ingredients such as tartaric acid or sodium citrate. This allows the fillings to meet the technical demands of pre-bake applications while reducing the amount of texturizer required. The result is a filling system that is both functional and elegant in texture.
Just as importantly, these fillings offer meaningful operational benefits. GELANIKA fillings are:
