Hazelnut Ice-cream

625g Water

80g Sugar

50g SOSA Dextrose

100g SOSA Procrema 100 Cold/Hot Natur

20g SOSA Liquid Glycerin

375g  Roasted hazelnut pure paste

1g Salt

Mix all the ingredients together and blend well with an immersion blender.



Let it maturate at 39°F (4ºC) for about 6 hours.



Churn it and keep in the freezer at 5°F (-15°C).
