Matcha Sponge
Egg White Substitute
5 g Sosa Potatowhip Cold
6.7 g Sosa Gelcrem Cold
0.67 g Sosa Konjac
155 g Filtered Water
Matcha Sponge
100 g Egg White Substitute
81 g Sugar
53 g Plant-Based Yogurt
64 g Grapeseed Oil
2 g Matcha Powder
65 g AP Flour
8.5 g Baking Powder
32 g Almond Flour
1 g Sosa Natur Emul
3 g Cornstarch
Combine the dry ingredients, sift, and set aside.
Combine the sugar, yogurt and oil. Mix the liquid mixture into the dries.
Whip the egg white substitute until thick and aerated- it should look like shaving cream.
Fold into the batter and immediately spread into a sprayed and parchment lined ¼ sheet pan.
Bake at 325F (2 bars on fan) for approx. 10 minutes, or until center springs back. Cool before cutting.
Pistachio Tart Dough
60g Plant Based Butter (Unsalted)
45g Confectioners’ Sugar
1g Fine Sea Salt
15g Pistachio Flour
9g Egg Replacer Powder
21g Filtered Water (For Egg Replacer Powder)
118g All Purpose Flour
Combine the egg replacer powder with the water and set aside for 10-15 minutes.
Cream the plant based butter with the confectioner sugar and salt. Add the hydrated egg replacer and mix well. Add the pistachio flour, followed by the ap flour in two additions. Mix just until the dough comes together.
Sheet to 2mm between parchment and freeze.
Matcha “Latte” Whipped Ganache
250g Oat Milk
250g Water
15g Potato Starch
70g Glucose DE60
150g Amatika White
200g Matcha Inspiration
Combine a small portion of the cold oat milk with the starch and set aside.
Pour the remaining oat milk and the water in a pot and add the glucose. Heat to 185F/85C then whisk in the starch mixture and bring to a boil.
Pour over the partially melted couverture in several additions, mixing well after each. Immersion blend to perfect the emulsion.
Pour into a shallow container and refrigerate for a minimum of 12 hours before whipping.
Vanilla “Ice Cream” (for Paco Jet)
755g Filtered Water
324g Amatika White
4g SOSA ProCrema
70g Granulated Sugar
70g Raw Cane Sugar (Turbinado)
0.5g Fine Sea Salt
2ea NOROHY Madagascar Vanilla Bean (or 1ea Tahitian Vanilla Bean)
Bring the water to a boil and add the split and scraped vanilla bean. Infusion for 15-20 minutes, then strain and rescale the water to 755g, adding more filtered water if necessary.
Combine the sugars, stabilizer, and salt and whisk into the vanilla infused water. Bring to a boil, then slowly pour over the partially melted couverture in several additions, mixing well with each addition.
Process with an immersion blender and divide between two Paco Jet containers. Freeze completely.
Pandan Pistachio Sauce
Pandan Infusion
300g Filtered Water
7g Dried Pandan Leaves
Pandan Pistachio Sauce
200g Pandan Infusion
75g Absolu Cristal
35g Sosa Pistachio Paste
30g Unsweetened Coconut Cream
10g Sosa Gelcrem Cold
0.5ea Lime Zest
0.5g Fine Sea Salt
Add pandan leaves to boiling water and remove from heat. Steep for 8-10 minutes then strain and reserve the liquid.
Combine the pandan infusion, pistachio paste and coconut cream. Blend with an immersion blender, then slowly sprinkle in the Gelcrem cold while mixing.
Allow to sit in the fridge for a minimum of 30 minutes before blending again.
When ready to use, add lime zest and salt to taste (around 2 pinches) and blend immediately before using.
Lime Gel
125g Lime Purée
60g Simple Syrup
50g Filtered Water
9.5g Gelcrem Cold
0.3g Konjac
0.5ea Vanilla Bean (Seeds Only)
Mix all the liquids and then sprinkle in the gelcrem cold mixed with the konjac while immersion blending. Mix for 1 min, then allow to hydrate in the refrigerator for a minimum of 30 minute.
Add the vanilla seeds and blend again until smooth and store in the refrigerator until ready to use.
Rice Clusters
40g Rice Krispie Cereal
40g Puffed Rice Cereal
200g Amatika White
Combine the two cereals and pour over tempered couverture. Mix thoroughly to coat, then spread out onto a parchment lined tray. Allow to fully crystalize before using.
Assembly and finishing
Bake the sponge and when cooled, cut rounds with a cutter.
Cut the pistachio dough with the same size cutter and bake rounds on a Silpan lined perforated tray at 315F until very light golden brown.
Process the ice cream on the Paco Jet and freeze until ready to use.
For décor, temper couverture (Amatika White or Matcha Inspiration) and spread between two strips of guitar sheets. Before it crystalizes, cut on a slight angle using a large teardrop cutter. Immediately place in a curved mold and allow to completely crystalize. Temper the other couverture (Amatika White or Matcha Inspiration) and spread between two strips of guitar sheets. Before it crystalizes, cut with various sizes of round cutters and place in a curved mold. Allow to fully crystalize.
For plating, pipe a round of pandan pistachio sauce on the plate and press with an espresso temper to spread. Place a disc of pistachio tart dough and top with a disc of match sponge. Whip the ganache to medium peaks and pipe a small drop onto of the sponge. Place a décor teardrop on top, followed by a larger drop of match whipped ganache. Make an indent using a hot spoon. Make a quenelle of vanilla ice cream and place directly on top of the indent. Finish with rice clusters and Matcha Inspiration décor discs. Pipe dots of lime gel and add additional sauce if desired. Serve immediately.
