Chocolate mousse

1 pound  EQUATORIAL DARK 55%

4 cups cream

2 ea whole eggs

5 ea yolks

1/4 cups sugar

Melt chocolate, set aside.



Whip cream to soft peaks, set aside.



Whisk eggs, yolks and sugar over double broiler until hot to the touch and remove.



Put the egg mixture in a kitchen aid and whip until thick and fluffy.



Stop the mixer, add all melted chocolate and 1/2 of the cream. Mix until combined thoroughly.



Fold in the rest of the cream.
