As the partner of Chefs in all aspects of pastry, Valrhona is excited to offer for the first time this business class designed for professional Chefs. Taught by Chip Klose, who has over 20 years of experience working in the industry and consulting, you will learn the important systems and structures to help you launch, grow, and scale a profitable concept. 

This class will be online, with 4 sessions happening every Monday, 2-5pm EST, from July 31st - August 21st . The maximum capacity for each class is 20 students, so you will be able to have all your questions answered in an interactive environment.  

Session Modules: 

  • July 31st (2-5pm EST): Marketing (Product Market Fit, Driving Demand, Building a Marketing Plan, Digital Marketing Tools) 
  • August 7th (2-5pm EST): A path to profitability (Budgets, Projections, Expense & Revenue Management) 
  • August 14th (2-5pm EST): Leadership & Management (Mission, Vision, Values, Expectations, Hiring, Training, Managing, Staff Development) 
  • August 21st (2-5pm EST): Systems & Goals (Audits, Goal-Setting, Systems, Frameworks, Proper Planning, Organization) 

Sessions can be purchased individually for $280 per session, or all 4 sessions can be purchased for $1,000.

Chip Klose is a NYC-based restaurant consultant as well as the host of the Restaurant Strategy Podcast. Over the past 20 years he’s worked with James Beard Award-winners and Michelin-starred chefs, and has opened numerous properties to rave reviews in one of the most saturated markets in the world. 

His goal — both in the work he does with his clients as well as on the podcast — is to help chefs and operators build more profitable restaurants. Guests on his podcast have included New York Times bestselling author Martin Lindstrom, Wharton professor Peter Fader, Founder of Cali BBQ Media, Shawn Walchef, and many, many more. The show is consistently listed on Apple’s Top 100 Marketing Podcasts, and was recently voted as a Top 20 Restaurant Podcast by Feedspot. 

As a coach he’s worked with dozens of companies, helping them with everything from menu costing and payroll to developing a framework for how to position their restaurant in the market. 

He’s a sought-after public speaker, lecturing on many topics including profitability and the intersection of hospitality and tech. His first book, aptly titled Restaurant Strategy, was released in the summer of 2022. 

He currently lives in Brooklyn, NY with his wife and son. 

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 

We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancellation date. 

As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged.
