Matcha, Raspberry and Black Sesame Tart

Step01

Sablée Inspiration Matcha

360g Butter Extra Dry 84% Elle & Vire Pro

200g Inspiration Matcha Valrhona

270g Icing Sugar

90g Almond Flour

6g Salt

150g Eggs

700g AP Flour

Using a stand mixer fitted with the paddle attachment, mix the cold, cubed butter until it reaches a smooth, soft consistency (pommade).

Add the Inspiration Matcha chocolate, melted to 35°C.

Add the powdered sugar, almond flour, and salt.

Add the eggs.

Add the flour and mix until a smooth, uniform dough forms.

Roll out immediately to 2.5mm thickness between two acetate sheets, then refrigerate overnight.

Baking temperature: 150°C/305F.

Step02

Black sesame frangipane

100g Butter Extra Dry 84% Elle & Vire Pro

90g Sugar

70g Black Sesame Paste

60g Almond Flour

2g Salt

100g Eggs

20g Toasted Black Sesame

Cream the butter, sugar and black sesame paste until homogeneous without incorporating air.

Add the eggs gradually, then the almond flour, the salt the black sesame.

Pipe into the par-baked tart shells. Bake at 150°C/305F. until the center is set but still moist (14 minutes circa).

Step03

Raspberry confit

384g Meeker Raspberry Purée 100%

50g Sugar

50g Glucose Powder DE33 Sosa

6g Pectin NH Sosa

Mix the granulated sugar, powdered glucose, and NH pectin, then sprinkle over the pureed raspberries.

Blend until smooth, then heat to 95°C, stirring constantly. Pour immediately.

Step04

Inspiration Matcha whipped ganache

225g Mineral Water

50g Glucose Syrup DE60 Sosa

500g Matcha Inspiration

750g Elle & Vire Pro Excellence Whipping Cream 35%

Heat the water along with the glucose syrup.

Slowly pour this hot mixture over the semi-melted chocolate. Immediately mix using an electric mixer to make a perfect emulsion. Add the cold whipping cream.

Mix in the electric mixer again. Store in the refrigerator and leave to stiffen, preferably overnight.

Whip until firm.

Assembly and finishing

Matcha, raspberry and black sesame tart

Line the sable into the desired tart ring, par- bake the shell for 10 minutes, pipe the sesame frangipane on the bottom of the tart (about 1/3rd ) and bake again for 12-14 minutes (see baking temperatures above). Cool down, then pipe some raspberry confit up to the edge of the tart. 

Whip the Matcha whipped ganache and pipe on top of the tart. 

Decorate with matcha inspiration chocolate sticks, and small rounds of raspberry confit (made by cutting the confit with a small cookie cutter) 

Serve at a cool temperature of 14C/57F.
