Join Chef Lee’s class to understand why she is known for bringing traditional French pastry training, a refined palate, and unexpected flavor combinations juxtaposed with a sense of playfulness; but above all, an unwavering desire to delight!  

Drawing from her high-end restaurant experience, Chef Lee will teach you her techniques to achieve texturally balanced, imaginative plated desserts and how to be classic and modern at the same time. Objectives:

  • Discover and learn how to select quality ingredients, focusing on seasonality 
  • Practice plating with an emphasis on balance, seasonality, and texture 
  • Observe and practice creating the components and finished plating for a unique dessert-tasting experience 

Class price includes light breakfast and coffee in the morning, lunch each day, a class recipe book, apron, pen, a gift bag, diploma, as well as all materials, ingredients, and equipment needed for class.

Pastry Chef Eunji Lee was born in South Korea and fulfilled a lifelong dream of studying pastry arts when she moved to France in 2006. Classically trained at the Institute National de la Boulangerie Pâtisserie in Rouen and at the Ecole Ferrandi in Paris, Chef Eunji spent three years in the acclaimed restaurant Ze Kitchen Galerie of William Ledeuil and then trained under Alain Ducasse and Cedric Grolet at three Michelin-starred Le Meurice for another four years – where she met her husband Matthieu. When the opportunity arose for Eunji to combine her classic French training with Korean ingredients, she jumped at the chance to become the Executive Pastry Chef of Jungsik, the two Michelin star modern Korean restaurant in New York in 2016.  

Chef Lee was the first non-European contestant and finalist in the French competition “Qui sera le prochain grand pâtissier?” (Who will be the next great pastry chef?) In 2019, she was awarded ‘Rising Star Pastry Chef in NY’ and ‘Art of Presentation’ by Starchefs with her signature dessert, Baby Banana. She took the stage at the 14th Annual StarChefs International Chefs Congress to compete in the Valrhona C3 North American Final and was awarded second place. Then in 2022, she opened her own pastry boutique, Lysée, in New York City’s Flatiron District. 

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 

We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancelation date. 

As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged.
