Join Chef Francois Daubinet to learn how to translate your inspiration and creativity into exquisite desserts.  Drawing inspiration from art coupled with his skills sharpened in French kitchens such as Hôtel de Crillon, Plaza Athénée, and Le Taillevent, Chef Daubinet is one of the most acclaimed pastry chefs of his generation. He is known for his creative desserts and pastries where bold and distinctive flavor is the main focus. 

Learn the thought process behind creating unique desserts and how to execute your vision. Chef Daubinet will discuss how to use your “library” of flavors to create delicious desserts in which technique and design merge together. Flex your creativity and leave this class feeling inspired and equipped to produce desserts with an artistic flair. 

OBJECTIVES:

  • Learn how to create a dessert from conception to finished product 
  • Practice plating and finishing techniques to make your creations stand out 
  • Discuss sources of inspiration and how they can be applied to pastry 

Class price includes light breakfast and coffee in the morning, lunch each full day, a class recipe book, apron, pen, a gift bag, diploma, as well as all materials, ingredients, and equipment needed for class.

François Daubinet was born in Thionville in Lorraine (Northeast of France), he is one of the most acclaimed pastry chefs of his generation. 

After eight years of training in pastry making with the Compagnons du Devoir-  A French Worker Association, he flew to New York to work for Financier Patisserie.  

He returned to Paris to learn the art of starred pastry-making and palace cuisine with Jérôme Chaucesse at the Hôtel de Crillon, then with Christophe Michalak at the Plaza Athénée. He then became Michalak's right-hand man at the launch of the Michalak Masterclass. 

In 2015 François Daubinet made a name for himself, becoming the head pastry chef at the famous Parisian gourmet restaurant Le Taillevent 

In 2017, he took over as head of international sweet creation for the Fauchon house, breathing a wind of freedom and innovation. He reinvents the pastry signature of this institution, with its clean lines and bold recipes. 

Today, this contemporary art enthusiast cultivates the desire to present personal projects that are close to his heart, particularly in the fields of art and custom creation. 

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 

We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancelation date. 

As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged.
