After earning an advanced vocational certificate (BTS), Matthieu decided to turn to the world of baking. He carried out his training between Paris and his hometown of Alsace in France before traveling across Europe to develop his skills. In 2015, Matthieu participated in the World of Bread (Mondial du Pain), in which he won second place and earned the Best Pastry prize, leading him to the Best of World of Bread in Taiwan the following year. The competitions helped him develop his technical skills and creativity. In 2016, Matthieu decided to enroll in the Best Craftsmen of France (Meilleur Ouvrier de France, MOF) competition in the Baker category. After taking two years to prepare for the competition, he was awarded MOF Baker in May 2019, at the Sorbonne. Today, he chooses to share his know-how and passion for the trade in training courses in all four corners of the globe.
