Join renowned cake designer Ron Ben-Israel and his crew at his flagship studio in the heart of NYC's Garment District for a three-day immersive experience. Students will create various types of peonies and branching cherry blossoms, and will decorate a chocolate display cake to take home.

Valrhona Pastry Chef Guillaume Roesz will introduce methods of creating professional chocolate cakes with various fillings, and discuss the origins and flavor pairings of the expansive Valrhona Chocolate collection, finishing with an engaging chocolate tasting.

To complete their training, each student will be given a small display cake to decorate with the flowers they made in class, and a large box to take home the cake and flowers. At the end of each day, time permitting, there will be a discussion about topics of interest to the class, such as the business of cakes, promoting your own confectionery work, your design ideas, and more. You will also enjoy a tour of the bakery and design studio! This is a great opportunity to be exposed to the inner working of the exclusive environment of Ron Ben-Israel Cakes & Treats, and to have all your related questions addressed.


· Create shape, texture, and movement in sugar paste to resemble flowers as they appear in nature.

· Dive into learning how to create a beautiful, moist, chocolate cake with easy but delicate chocolate fillings to add an extra wow for your chocolate-loving customers.

· Get an insider tour of Chef Ron’s bakery and design studio, and meet his dedicated staff.

· Discuss topics of interest to the class, such as the business of cakes, promoting a unique brand, pricing confectionery work, inspiration for design concepts, and more.

· Flowers featured in the class will include various types of peonies and branching cherry blossoms.

Class price includes light breakfast and coffee in the morning, lunch each day, a class recipe book, apron, pen, a gift bag, diploma, as well as all materials, ingredients, and equipment needed for class.

Due to the Covid-19 pandemic classes no longer include a class dinner.

As Chef-Owner of one of the most established couture cake studios in the world, Ron Ben-Israel started his confectionery adventures after a fifteen-year career as a professional modern dancer. Upon retiring from performing with companies spanning three continents, he utilized his fine art schooling and ballet training to master the discipline of pastry arts.
After apprenticeships and engagements in Toronto, Canada and Lyon, France, he was led to New York City. In 1996, his cakes were discovered while on display in the windows of Mikimoto on Fifth Avenue and commissions quickly followed from Villeroy & Boch, Baccarat, DeBeer’s, Bloomingdale’s and Bergdorf-Goodman.

In 1999, Ron established his flagship design studio and bakery in Manhattan’s fashionable SoHo neighborhood. After calling SoHo home for fifteen years, the company moved to a new, expansive location in the heart of Manhattan’s iconic Garment District. The new facility includes a design studio, showroom, production kitchen and teaching classroom. It also hosts social and corporate events under the name Above Twelve.

The collections of trendsetting cakes can be spotted in many of New York’s premiere hotels and venues. They also have been featured in countless publications, including The New York Times, In Style, Vogue Magazine and Martha Stewart Weddings, with which Ron has collaborated extensively for over 20 years.

Many television shows, films and books also have chronicled the success of the bakery. Ron and his work have been highlighted on The Oprah Winfrey Show, Bravo’s Top Chef—Just Desserts, The Late Show with David Letterman (CBS) and The Martha Stewart Show. Ron also has appeared in Lifetime’s Drop Dead Diva and HBO’s Everyday People. The bakery was fictionalized in the New York Times’ bestselling novel Shopaholic Ties The Knot, by Sophie Kinsella.

In 2011 the bakery received further acclaim when Ron became host and judge of the Food Networks’ hit show Sweet Genius, which aired for three seasons. Since then he has been a favorite judge and guest on numerous Food Network programs, including Chopped, America’s Best Cook, Worst Cooks in America, Guy’s Grocery Games, Halloween Baking Championship and All-Star Gingerbread Build. Ron also is a co-judge on Cake Wars, which is airing its third season during Summer 2016.
Ron travels the U.S. and internationally as a teacher, lecturer and motivational speaker. He is a popular headliner at culinary and pastry conventions as well as at special-events and fundraisers. He is is the only Guest Master Pastry Chef at the renowned International Culinary Center in New York City where he shares his passion, techniques and secrets with the students through exclusive demos and classes.

Some of Ron’s most well known cakes include the trendsetting Sex and the City 2 cake in partnership with Swarovski, as well as The Plaza’s 100th birthday cake—an exact confectionery replica of the famed New York landmark, measuring over 12’ tall and serving 1,500 guests.

Ron is a proud member of City Harvest’s Food Council and its Advisory Board, which brings together over sixty of New York City’s top chefs, restaurateurs and food industry professionals to aid the organization in the fight against hunger. Ron also is an active supporter of Lambda Legal Defense and an advocate of same sex marriage.

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 
We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancelation date. 
As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged.

Covid Policy: 

Valrhona takes the health and safety of our students, instructors, and employees very seriously. To help address the risks posed by COVID-19, we are implementing certain protocols for classes held at our school and with our school partners. 

As of 11/9/2021, all students, employees, and instructors must follow the below protocols when attending an in-person class held by l’École Valrhona Brooklyn. Changes to our Covid policy will be communicated to students via email and posted on our website.

Before Attending a Class, Students, Employees, and Instructors Must: 

  • Prior to the start of class, proof of vaccination must be emailed to us as mandated by New York State law. Please email to:  Your information will be kept confidential.  
  • Before coming to visit, self-monitor for symptoms of COVID-19. For a list of symptoms please refer to the CDC Website here. If the student is experiencing any symptoms or circumstances of COVID-19 or is feeling sick, they are required to notify the l’École Valrhona Brooklyn team immediately and will be provided with a class credit to attend a future l’École Valrhona Brooklyn class. 
  • 1-3 days before the first class date, provide proof of a negative COVID-19 rapid test result. Please email test results to Danielle FitzPatrick, l’École Coordinator, Your information will be kept confidential.  
  • Before entering class each day, self-monitor, complete, and submit the Daily Assessment Certification which will be emailed the night before each class day. 
  • If unable you are unable to attend class due to the requirements above, you will be provided with a credit for future classes, as determined by l’École Valrhona Brooklyn. 

During Class, Students, Employees, and Instructors Must: 

  • Refrain from physical touching. Students are prohibited from shaking hands, hugging or embracing, and cheek-to-cheek kissing. 
    Wear face coverings at all times. Students are required to wear a face-covering at all times while in class, unless eating, outside, and engaged in social distancing, which means standing or sitting at least 6 feet away. 
  • Practice social distancing whenever feasible. 
  • Self-monitor for symptoms of COVID-19 and leave the class immediately if you experience symptoms. You will be provided with a credit for future classes, as determined by l’École Valrhona Brooklyn. 
  • Wash hands and/or use hand sanitizer. Wash your hands often with soap and water for at least 20 seconds or use hand sanitizer. 
  • Key times for handwashing include: 
    • Before and after class 
    • After blowing your nose, coughing, or sneezing 
    • After using the restroom 
    • Before eating or preparing food 
    • After putting on or touching face coverings. 
    • Avoid touching your eyes, nose, and mouth. 
    • Cover your sneeze or cough. Cover your mouth and nose with a tissue when you cough or sneeze, or use the inside of your elbow. 

Failure to comply with any of the above precautions will result in removal from class, with no class credit given. Valrhona and its partners reserve the right to remove students from class at their own discretion.
