CONTENT OF THE CLASS

As an instructor Chef Ghaya brings a lot of experience, inspiration, and knowledge from her previous position as Executive Pastry Chef of two Michelin starred restaurant, Daniel, and 2017 James Beard Award “Outstanding Pastry Chef” winner. 
During this class Chef Ghaya will share her knowledge of high-end pastry along with fine dining desserts, and how to open and operate a successful pastry shop. Chef Ghaya will teach you her techniques to achieve texturally balanced, imaginative pastries.

PRICES INCLUDE

Class price includes light breakfast and coffee in the morning, lunch each day, a class recipe book, apron, travel mug, pen, a professional photographer, as well as all materials, ingredients, and equipment needed for class. In response to Covid the class price no longer includes a group dinner, the class price has been lowered to reflect this change.

We try our best to finish on time, however, class may go over the allotted time to cover all the class material. Please keep this in mind when arranging your travel.

Ghaya F. Oliveira brings her talent in both the science and creativity of pastry to her role as the Executive Pastry Chef at DANIEL. Ghaya’s first career was not in the kitchen, but as a stock trader in her native Tunisia, but after moving to the United States in 1998, she chose to pursue creative challenges in the kitchen rather than on the trading floor. Nearly 20 years later, she reached the pinnacle of the pastry profession, winning the James Beard Award for “Outstanding Pastry Chef” in 2017.

Upon graduating from the Culinary Academy and then earning a degree in Restaurant Management from the French Culinary Institute, Ghaya joined Café Boulud in New York in 2001. At Café Boulud, Ghaya was promoted on several occasions, first to Pastry Cook, then to Pastry Sous Chef. “I slowly worked my way up,” says Ghaya. “Time didn’t matter because I was so hungry to learn.”

When Chef Daniel Boulud opened Bar Boulud in 2007, he called upon Ghaya to become Executive Pastry Chef. She became responsible for menu development and sourcing ingredients, citing the local farmers’ markets as inspiration. When neighboring Boulud Sud opened in May 2011, Ghaya’s sheer talent and ambition led Boulud to make her the Executive Pastry Chef there, too.

In July 2013, Boulud named Ghaya the Executive Pastry Chef at his flagship DANIEL. She brings traditional French pastry training, a refined palate, and unexpected flavor combinations, juxtaposed with a sense of playfulness; but above all, she brings an unwavering desire to delight!

CANCELLATION POLICY

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 

We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancellation date. 

As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged. 

Our response to Covid

We will be taking every safety precaution and following all local and CDC guidelines as we prepare for and host these classes beginning in April. The health and safety of our community and team is our first priority, and we will be constantly updating our plans and precautions to ensure maximum safety.
